Slow cookers aren’t just for winter, enjoy our easy and delicious slow cooker beef roast on busy summer evenings!
I love my instant pot. I use it weekly and posted a few recipes including an Easy Instant Pot Whole Chicken and Instant Pot Squash with Homemade Marinara Sauce. It’s just so easy to use and fool-proof. Plus, my memory is awful and sometimes 3pm rolls around and I forgot to put the meat into the slow cooker and my family needs to eat.
Thankfully I have my husband to set reminders for me. He even texts me some mornings to make sure I’ve remembered to do something because I often forget to write stuff down, oops. My instant pot also has a slow cooker function that is fabulous and perfect for when I DO want to throw a beef roast in and just let it simmer all day. I could probably do the beef roast on the instant pot high pressure function but beef roasts in my opinion are best made slowly. I simply season the roast with salt and pepper and then add in the water, garlic, onion soup mix and cook on low for 5-6 hours.
This is the perfect meal for when the kids aren’t in school too. I’m home more often in the mornings and remember to throw the meal in and then we can head off to the beach or the park for the afternoon and have dinner ready by the time we walk in the door. It’s a thing of beauty and I’m not tempted to stop for fast food and grab crap at the local 7-11 for the kids.
