Create a healthy meatless meal using your instant pot and spaghetti squash.

If you received an instant pot for Christmas or Mother’s Day, now is the time to dust it off and use it. I love my instant pot. I honestly never thought I’d use it as much as I do but it’s so convenient that I use it at least 1-2 times a week. It even sits out out on the counter most weeks where my old KitchenAid stand mixer used to sit. Not only do I use the slow cooker function for main dishes throughout the week, I also love the high pressure and steam function for veggies and other side dishes. It’s so easy, I just throw everything in and go.

If you love spaghetti squash as much as I do, you will love cooking it in your instant pot. It takes only MINUTES and while it’s cooking, you can prepare the marinara sauce on the stove top and have it ready by the time the instant pot timer goes off. This meal is perfect for meatless Monday or maybe you’re just trying to eat healthier. I love cooking squash a few times a month and having it ready to reheat for easy lunches and side dishes. It’s nice having dishes pre-made so I don’t feel tempted to grab fast food.

Instant Pot Squash & Homemade Marinara Sauce Recipe

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 2-3 pound spaghetti squash
  • 1 C. water
  • 1/4 – 1/2 C. butter (optional)
  • salt & pepper to taste

Marinara Ingredients

  • 2 C. tomatoes, diced (you can also substitute 14 oz can of organic diced tomatoes)
  • 2 garlic cloves, minced
  • 1/2 tsp. granulated sugar
  • 1 tsp. dried basil
  • 2 tsp. dried parsley
  • 1/4 tsp. dried oregano
  • salt & pepper to taste

Instructions

  • Slice the squash in half lengthwise. Remove the seeds and discard.
  • Place the squash into the Instant Pot and add 1 cup water.
  • Press the manual button and high pressure. Close the vent.
  • Set the timer to 6-7 minutes.
  • After 6-7 minutes, allow the Instant Pot to vent by releasing the knob.
  • Carefully remove the lid and remove the squash.
  • Gently scrape the squash into a large bowl and discard the skin.
  • Marinara Directions

    1. Combine all the ingredients in a medium sauce and simmer on medium heat while the squash is cooking.
    2. Place the squash into a serving dish and top with marinara sauce before serving
