Every January I feel like I reset. I don’t do New Years resolutions. Ever. Instead I often reset and try to start fresh thinking ahead and making goals for the new year. Yes, eating healthier is often on the list, but for me, eating healthy is all the time and I believe in moderation is key. Yes, I work out 4-5 days a week. But I also enjoy a Wendy’s cheeseburger every week, too. I like to live a little.

These homemade chewy granola bars are awesome. They are easy to make, good for you and the kids love them! They are perfect for a quick snack or grab & go breakfast. And, they are so versatile. You can add other mix-ins: dried fruits, nuts, even chocolate chips! The possibilities are endless.

I like making at least two batches. I cut them into smaller bars and individually wrap each one in plastic wrap. I place them in a tub and keep in the fridge so they stay firm. They are easy for the kids to grab for a snack or breakfast.

Ingredients

  • 2 1/2 C. old fashioned oats (not quick cooking oats)
  • 1/2 C. chopped almonds
  • 1/3 C. honey
  • 1/3 C. brown sugar
  • 1/4 C. butter, cut into smaller pieces
  • 1 tsp. vanilla extract
  • 1/2 C. dried cherries

Instructions

  • Preheat the oven to 350 degrees.
  • Spread the 2 1/2 cups of old fashioned oats and chopped almond on a baking sheet. Bake 3-4 minutes or until lightly toasted. Watch them closely so they do not burn.
  • Remove the oats and almond from the oven and pour into into a large bowl.
  • Add the butter, honey and brown sugar and vanilla extract to a small saucepan. Heat until melted and pour the mixture over the oats and almonds. Stir to combine.
  • Let cool a few minutes and add in the dried cherries.
  • Pour the mixture onto a baking sheet and press down evenly.
  • Cover the bars and refrigerate several hours.
  • Cut into bars or triangles and wrap each individually with plastic wrap.
  • Store in the fridge.
