As much as I love my classic Christmas cookie recipes, every year I try to make a new cookie for the holidays. I’m typically a chocolate lover but since I was trying something new, I made these cranberry pinwheel slice and bake cookies!

Slice and bake cookies are one of my favorites because I typically make them the day before, refrigerate them overnight and then slice and bake them. That’s exactly how I made these cranberry pinwheel cookies!

These cookies have a classic butter cookie flavor, almost like a delicious butter shortbread. But with a nice sweet and chewy center of brown sugar, nuts and cranberries. They are really unique and delicious.

How to Make Cranberry Pinwheel Slice and Bake Cookies

You can find fresh cranberries in the produce section around the holidays. I use my food processor to chop up the fresh whole berries. I use my favorite nut grinder to grind the nuts to the perfect size for these cranberry pinwheels.

Cranberry Pinwheel Slice and Bake Cookies

Ingredients

  • 1/2 cup softened butter
  • 3/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1-1/2 cups flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons brown sugar
  • 2 teaspoons milk
  • 1/2 cup finely chopped fresh cranberries
  • 1/2 cup chopped walnuts

Instructions

  • Add butter, sugar, egg and vanilla in a large bowl and beat well until fluffy.
  • Add dry ingredients (flour, baking soda and salt) in a smaller bowl and mix well. Add to butter and sugar mixture and beat just until combined. Wrap dough into a ball, cover with plastic wrap and refrigerate for an hour.
  • Remove from fridge, unwrap and roll onto a lightly floured surface until you have a 10" square.
  • Combine brown sugar and milk in a bowl and mix well. Spread over dough, leaving a 1/2" edge around all sides. Sprinkle with cranberries and walnuts.
  • Roll dough tightly, jelly roll style. Wrap tightly with wax paper and refrigerate for 4 hours or overnight.
  • When ready to bake, preheat oven to 375 and line a banking sheet with parchment paper or use a well-greased baking sheet. Slice cookies into 1/4" slices and place at least 2" apart on baking sheet.
  • Bake for 14-15 minutes or until edges begin to turn brown. Continue to cool completely on a cooling rack.
