With only 1 ingredient, these Strawberry Fruit Popsicles are easy to make and delicious!
Here at Craft Create Cook, we love popsicles. Can you tell? The warmer weather makes us want to make yummy frozen treats that don’t take a lot of time but are also good for you and the kids! My kids love treats, especially fresh fruit that is in season and has tons of flavor. Strawberries are one of their absolute favorite and I don’t mind letting them indulge.
I grew up on a 100 acre strawberry farm and my parents often joke that I was almost born in one of the strawberry patches. My birthday is July 3rd. Peak season for a strawberry farm. I was several weeks early and apparently my mom barely made it to the hospital. That being said, I know a thing or two about fresh strawberries and how they should taste. I grew up working along side my parents in the fields and in the berry shed at the register. During the summer months I could often be found out in one of our many strawberry fields eating my weight in fresh Michigan grown strawberries. I won’t lie, I wasn’t a fan of getting up early in the morning to pick berries and did so begrudgingly. I’d stomp out to the fields and just sit in my row, enjoy the warm summer sun and stuff my face with fresh yummy strawberries. Now that I’m adult, I actually miss it. My parent’s still have the 100 acre farm but no longer grow produce and I like to think that my husband and I will eventually try our hand at running it when the kids are older.
If you love fresh ripe strawberries as much as we do, these popsicles are perfect for you and healthy! All you need is 1 pound of fresh, ripe strawberries, a food processor, a little bit of water (you could also use coconut water) and a popsicle mold.
Remove the stems, rinse the fresh strawberries and add to the food processor and pulse until blended. Add a little bit of water or coconut water at a time to thin out the berries. Then, pour the mixture into your popsicle molds, cover and freeze. So easy and healthy!
