I'm a mom. Strike that. I'm a really busy mom. I know, I know, all moms are busy. Between taking care of our homes, staying at home with our children or working and then running our kids around like a taxi service we have a lot on our plates. It's hard having so much to do and I try as hard as I can to keep everything running as smoothly as possible.
One of the ways I keep things running smooth is focusing on a healthy breakfast for my family every morning. Even if the kids don't want to eat anything, I tend to pester them into having something. Because mornings are hectic and I like to keep healthy, easy foods like Dannon Oikos Greek Nonfat Yogurt from my local Meijer store in the refrigerator. I love yogurt and so do my kids. Dannon Oikos Greek Nonfat Yogurt comes in a variety of yummy flavors and is packed with protein, calcium and Vitamin D. They have enough flavors that everyone happy in the morning! It's the perfect addition to my morning and makes for a treat before or after spin class for this busy mom.
This past weekend, I tried something new with Dannon Oikos Greek Nonfat Yogurt. I had a few containers of Strawberry Oikos on hand in the fridge and decided to try a new twist on pancakes! I love making large batches of homemade pancakes and freezing them. Then, on school mornings I can pull a few from the freezer, reheat in the microwave or toaster and we have a healthy, easy, on-the-go breakfast. For this recipe I added Strawberry Dannon Oikos Greek Nonfat Yogurt to make them extra healthy and they are packed full of Vitamin D, protein and calcium. We love strawberries and the yogurt was a perfect addition.
Strawberry Greek Yogurt Pancakes
2 C. flour
2 tbs. sugar
1 tsp. baking powder
1 tsp. baking soda
1 large eggs
2 5.3 oz cups of Dannon Oikos Strawberry Greek Nonfat Yogurt
1 C. water
½ C. fresh strawberries, diced
- Combine the flour, sugar, baking soda and baking powder, eggs, Dannon Oikos Strawberry Greek Nonfat Yogurt and water, mixing well.
- Fold the fresh strawberries into the batter.
- Heat your griddle on medium high heat (about 300 degrees). Scoop the batter ¼ cup at a time onto the griddle.
- Let cook 3-4 minutes until the top of the pancakes from bubbles and then flip.
- Cook on the other side until the pancakes are cooked through and golden brown.
- Serve with your favorite syrup, fresh strawberries and whipped cream.
