Spring is right around the corner! I’m so excited for blooming flowers, more daylight and softball! That’s right, this year, my daughter moves from t-ball to softball! We will have practices once a week and games twice a week. This means the hustle and bustle of the season will begin in a few short weeks.
On the nights I have to rush to softball practice, I make one of my family’s favorite meals, Honey Ham Egg Salad Sandwich. My kids love them so much, they will ask for a second sandwich for the ride from the softball field home! I can quadruple the recipe and we still gobble it up in one sitting!
The best thing about this recipe is it uses only 6 ingredients, you can make it ahead of time and find all the ingredients you need at your local Walmart store! - 2 slices Pepperidge Farm Farmhouse™ Oatmeal bread
- 4 slices Hillshire Farm® Thin Sliced Honey Ham, chopped
- 2 tablespoons Hellmann's® Real Mayonnaise
- ¼ cup chopped red pepper
- 1 green onion, sliced
- 1 hard boiled egg, sliced
- Combine ham, mayonnaise, red pepper, green onion and egg in a mixing bowl.
- Mix well to evenly combine and coat all ingredients.
- Spread onto a slice of bread and top with the other slice of bread.
- Enjoy with your favorite piece of fresh fruit!
